Our Feature Product: Focaccia

Focaccia, known and loved in Italy & abroad.  The name comes from the Latin 'focacia' meaning hearth or fireside. Early versions were cooked on the hearth of a hot fire.  We use cast iron- the rustic old fashioned vehicle to bake our focaccia. 


Good focaccia should have an ultra-tender and moist crumb and a fragrant and crisp crust.  In order to achieve above qualities, we follow the most traditional method of using sourdough as our bread base.  


Our sourdough is raised simply with flour, water and days of labor.  The sourdough base builds flavor and texture.  We use natural starter and high-protein bread flour to give our bread more chew. This highly hydrated and enriched dough is wet and loose, it won’t strengthen to the same degree as a typical bread dough and requires finesse handling from our artisan bakers. 


Letting the dough rise before pushing it into the skillet developed enough gluten to create the signature airy holes in the focaccia. Dimples are created with fingers then adorned with seasonal produce and favored toppings.  Dressing the skillet with extra-virgin olive oil creates a perfect, slightly fried bottom crust when the cast iron is heated in the oven.

Focaccia can be topped with just about anything you can imagine. Our savory favorite is topped with fresh garlic, fresh rosemary, chopped cherry tomatoes, sliced kalamata olives and extra-virgin olive oil. Our sweet favorite is topped with the Taiwanese cookie crumble, a twist of Euro-Asian flavor.  Dusting the top with coarse sea salt for the savory and raw sugar for the sweet: the chunky crystals bring unexpected pops of flavor.
